There has been a lot of talk about tinned tomatoes on toast on twitter recently. I must admit I had never heard of this snack, much to the disappointment of my live-in photographer Dan.
I thought I would give it a try and it was delicious! I’m pretty sure the original British comfort food is just the tomatoes on white bread, nothing added, but I thought I would give them a little kick with some dried chilli, herbs and confit garlic.
They were so good, on some toasted, buttered olive bread, that they gave me a bit of a hankering for other tinned-goods-on-toast. Anyone for spaghetti hoops?
Tinned Tomatoes on Toast
serves 2
1 tin plum tomatoes
1 large clove of garlic, thinly sliced
25g butter
squeeze of tomato paste
large pinch dried chilli flakes
pinch dried oregano
1 tsp sugar
salt
pepper
Put the tomatoes and their juice in a small pan with the tomato paste, chilli flakes, oregano, sugar, and seasoning. Bring to a simmer and cook until any harsh tomato taste has gone. But be careful not to break up the tomatoes!
Meanwhile, melt the butter and add the sliced garlic. cook over a low heat for 5 minutes. This will render the garlic melting and sweet, the perfect complement to the tomatoes. Pour the garlic and butter into the tomatoes and mix gently.
Toast a couple of slices of your best bread, and butter lightly. Slop over the tomatoes and eat for breakfast. Yum!
